Small marble tables under swirling fans, a straightforwardly bare decor, and waiters who are given to whistling classical melodies; that's the Trianon, since 1923 a local pizzeria that's drawn mainly Neapolitans, not the tourist hordes of Brandi or Port'Alba.

The classic margherita is raised to an art form here, or try the sostanza that fortifies a basic pie with pecorino, prosciutto, and eggs. But their crowning glory is the Gran Trianon, a weighty pizza topped with at least eight ingredients of the pizzaiolo's choosing.
